You could develop a component using Fabrik that allows you to create applications (extensions) for Joomla, such as a task list through which users can mark-off tasks assigned to them. (I assume a lot is possible, with it, but it has a learning curve and may not be something you want to dig into if the need for this task management is more urgent. For more immediate needs, I would try looking on sites like Sourceforge or similar, or even installing a script on your hosting via Softaculous (or similar) from eh "project management" category.
